It is a sad fact of life that if you do something often enough it gets boring. This is even true of something as perfectly delicious as cookies. At first we had to find an alternative to Leslie's Cookies. Enter the Peanutbutter cookie. They were awesome. Until we ate them for 3 months.

If we had been smarter, we would have alternated recipes from time to time. That might have bought us more time, but two cookies can't keep people interested for long. The only real answer is to have more recipes. No problem! Cook took on the challenge and quickly whipped up a batch of these delicious treats. They are lemony and chewy with a hint of sweetness. More importantly, they are a great change up in our cookie rotation.
